Instant Pot

The Instant Pot earns its counter space in an RV for reasons that have little to do with speed. One pot means one thing to wash. It needs very little water, which matters when you are carrying all of yours. And it draws power in a short burst instead of heating the whole trailer the way the oven does. There is one recipe here so far: canjica, a Brazilian hominy pudding that comes out the same in a trailer as it does in a house kitchen. More will follow as we cook them.
